About Our Business
Throughout my youth, I was significantly influenced by the techniques and secrets of fine Italian
cooking. Everything "Mama" and my "Nonnas" prepared and served was always homemade
from scratch. Their unyielding persistence to use only the freshest & finest ingredients was a
virtue that was passed down to me, as it was passed down to them, from generations of
wonderful Italian cooks, using age old recipes; many being in the family for well over a century.
Having parents that emigrated from their native Italy, where they owned and operated a
successful restaurant in Calabria, first to Canada, and then to the United States in 1979; we
proceeded to open “La Dolce Vita” in San Jose, California. For the next two decades, we
specialized in providing our customers with the finest in Southern Italian cooking, rarely found
outside of Italy and New York and other major cities of the Northeast, and Chicago, all cities
where many southern Italian immigrants settled early in the last century. It was at this
restaurant, participating in every aspect of the family business, that my already considerable
cooking skills were finely honed and developed.
After selling the restaurant, I decided I wanted to pass on the expertise that I had acquired to
others and was retained by Shallots Cooking School, in Vacaville, for a 20 month series of
Instruction in Italian Cooking, which has been, and is, exceptionally successful, with many
repeat students. So today, in the next step of my culinary journey I am able to provide you with
dishes that are all prepared from scratch in our own kitchen, absolutely no finished product is
store bought; and will long be remembered by your family, friends and or associates for their
uniqueness & mouth-watering goodness.
